Understanding the Biology of Active Sites

Enzyme Action and Industrial Applications
Immobilised enzymes are incredibly useful in modern industry and medicine. They convert glucose to fructose for use as sweeteners in processed foods, making them taste sweeter with less sugar needed. These enzymes also modify penicillin's structure, allowing it to fight a broader range of bacterial infections and creating new antibiotics.
The active site is where all the enzymatic magic happens - it's the specific region of the enzyme that binds with the substrate (the molecule being changed). What's fascinating is that the active site isn't rigid like a lock and key. Instead, it's flexible and changes shape when the substrate approaches, much like a glove moulding to fit your hand perfectly.
The induced fit model explains this process in six clear steps. First, the substrate approaches and combines with the enzyme's active site. The active site then changes shape to accommodate the substrate better, forming an enzyme-substrate complex. During this transition state, the bonds in the substrate are altered to create the final product, which then leaves the active site, allowing the enzyme to return to its original shape and repeat the process.
Remember: Enzymes are reusable - they emerge unchanged after each reaction, ready to catalyse the same process again and again!
